Boozy Spiced Clementines


I found this recipe in the 'Sainsburys magazine' , and decided to make it as they're a light dessert alternative, after the heavy puddings and pies from Christmas, and they last in the fridge for up to a month!

Ingredients:

14-16 easy peel clementines

200g caster sugar

2 cinnamon sticks

1 star anise

8 whole cloves

6 cardamon pods

2 tbsp of lemon juice

250ml of orange liqueur

1. Peel and remove any pith from 14-16 easy peel clementines.

2.In a wide pan, dissolve the caster sugar in the 250ml of water, adding the cinnamon sticks, the star anise, the whole cloves and the cardamon pods.

3. Bring to the boil and allow to simmer for 5 minutes.

4. Add the clementines in a single layer, as well as the lemon juice and the orange liqueur.

5. Simmer for 20minutes.

6. Ladle into a 1.5l litre jar, that has been sterilised.
