by Anna Pump and Gen Leroy.
I've been looking for this recipe for years, in my opinion, it's the perfect peanut cookie recipe- just right for using up leftover peanuts from christmas!

Ingredients
8tbsp softened butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 tsp vanilla extract
1 egg
1 cup flour
1 tsp baking powder
1 cup shelled peanuts
a pinch of salt
Preheat the oven to 180c, line two baking sheets with greaseproof paper.
In an electric mixer, cream the butter and sugars until the mixture is light and fluffy.
Add the vanilla and egg, beat well. Add the flour, salt, baking powder and the shelled peanuts. Blend well.
Put rounded tablespoons of batter onto the baking sheets, leaving room to spread.
Bake for about 10minutes, or until the cookies are light brown.
Allow to cool.
