Mango, banana and coconut smoothie lollies
These lollies are so simple to make that you will never want to buy lollies from the supermarket again! The other added advantage of making your own is that you know exactly what has gone into them and can adjust the sweetness to suit yourself.
2 ripe mangos
1 ripe banana
5 tablespoons of coconut cream ( I freeze any that is left after opening a can )
1 tablespoon of maple syrup ( optional )
Carefully peel the two mangos and remove the flesh from around the big seed and place in a blender with the peeled banana, coconut cream and maple syrup if you are using it. Blend until smooth and taste to see if you need any more syrup, then simply pour into 6 lolly moulds and freeze until set ( I left mine over night ). When ready to use run under a hot tap to just melt the outside of the lolly for easy release from the mould.
