Blackcurrant Sorbet

This is a lovely refreshing Spring/Summer dessert that is very easy to make.

ingredients:

450g fresh or frozen blackcurrants

150ml water

125g caster sugar

1 egg white (optional)

How to:

1.Put the blackcurrants and water into a saucepan, cook gently for 10 to 15 minutes until soft.

2. Add the sugar.

3. Pour the mixture into a suitable container and freeze until solid around the edges or put it into an ice cream maker and follow the manufacturer's instructions.

WITHOUT AN ICE-CREAM MAKER:

If you're making the sorbet WITHOUT an ice-cream maker, you can make it lighter by adding egg white before the mixture freezes completely.

Whisk the egg white until stiff and whisk into the semi-frozen blackcurrant puree to make a fluffy mixture. Pour the mixture back into the container and free again until solid.

Take the sorbet out the freezer 30 minutes before eating.
