Sticky Malt Loaf
I have a soft spot for malt loaf! I love the sweet, malty squishiness of it, with all the dried fruit I can't imagine anything nicer on a Sunday afternoon,spread with thick butter and a cup of tea in the garden. It is amazingly simple to make too. You can buy malt extract in health food shops and I have used BBC Good Food Recipe.
ingredients:
loaf tin liners
150ml hot black tea
175ml malt extract, plus extra for glazing
85g dark muscovado sugar
300g mixed dried fruit
2 large eggs, beaten
250g plain flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
How to
1. Heat the oven 150c
2. Place loaf tin liners into two 450g loaf tins.
3. Pour the hot tea into a mixing bowl with malt, sugar and dried fruit. Stir well, then add the beaten eggs.
4. Tip the flour, then quickly stir in the baking powder and bicarbonate of soda.
5. Pour into the tins.
6. Bake the 50minutes until firm and well risen.
7. While still warm, brush with a little more malt to glaze and leave to cool.
8. Remove from tins.
9. Slice, smother in butter and enjoy!
