Rich Chocolate Mousse

I have been looking for a good egg free mousse recipe for ages and I think this is the best one I have tried so far, you would never know it is made with tofu! This indulgent, chocolate mousse is really delicious and I think this recipe would serve far more than the 4 suggested as it is so rich. This is such a simple recipe it would be easy to replace the vanilla extract with mint or orange extract just to change things up a bit!
Ingredients
300g silken tofu
340g dark chocolate
240 ml full fat milk ( or milk alternative if making vegan version )
1/2 tsp vanilla extract
1 tablespoon maple syrup or honey

1. In a food processor, blend tofu until smooth.
2. In a saucepan over a low heat combine the chocolate, milk, vanilla extract and maple syrup or honey. Stir until the chocolate has melted. Slowly add the hot chocolate milk to the food processor (about a tablespoon full at a time) and blitz after each addition.

3. Pour into individual dishes ( this recipe will fill about 8 small ramekins) or one large serving bowl. Refrigerate until set ( about 2hrs)
