Chelsea Buns


I love spiced buns and they are especially good when eaten warm from the oven. This is an 'allrecipes' recipe although I have changed a few of the ingredients.

10g Dried Instant Yeast

350g Strong White Flour

50g Sugar

50g Butter

Pinch of Salt

1 Medium Egg

100ml lukewarm milk

50ml lukewarm water

For The Filling of the Buns

50g butter (melted)

50g soft light brown sugar

150g mixed fruit

1 1/2 tsp mixed spice

1 cup icing sugar

1. Mix flour, sugar, salt and yeast together in a bowl, rub in butter until mix resembles breadcrumbs.

2. Beat egg and add to dry ingredients with the milk. Add enough water to form a smooth dough.

3. Knead the dough well until smooth and elastic (about 10 min). Place back in bowl and cover with greased cling film, leave in warm place to rise for 30min.

4. Knock dough back and roll out into a 30x25cm rectangle. Spread melted butter over the dough then sprinkle over evenly sugar, mixed spice and dried fruit. Roll up long end like a swiss roll, cut into 10 equal slices and arrange into a round, greased 20cm tin. Cover with a tea towel and allow to rise for about 30min.

5. Preheat oven to 190 degrees C.

6. Bake for 20minutes or until risen and golden. Allow to cool then drizzle with icing (mix a little water or lemon juice with the icing sugar until it is of a desired consistency). Tear into individual buns to serve.
