Mini Oven Baked Donuts With Chocolate Dipping Sauce


These are really fun and brilliant for an easy dessert, indulgent snack or children parties and the possibilities for flavours/icing are endless! You will need a mini donut pan, I bought mine years ago from Lakeland and they are still available from loads of different outlets.

Preheat the oven to 160 degrees C/ 325degrees F/ Gas mark 3

8oz plain flour

2 tsp baking powder

1 tsp salt

6oz caster sugar ( I only used 4oz as the dipping sauce/ icing is so sweet )

6fl oz milk

2 eggs beaten

1 tbsp vegetable oil

1tsp vanilla extract

1. Put the flour, baking powder and salt into a large bowl and give it a good stir with a ball whisk ( I am too lazy to sieve it but you can if you want!) Add the sugar and give it another stir.

2. In a separate bowl, whisk the beaten eggs, milk, vegetable oil and vanilla extract together and add this to the dry ingredients, mix thoroughly with the ball whisk. You should end up with a thick smooth batter.

3. Spray the tin liberally with spray oil to help with removal, then place 1 tablespoon of mixture into the donut cups so they are 3/4 full (do not overfill or the hole in the middle will disappear when baked). Place in the oven for about 9 minutes or until firm but springy to touch.

4. Allow to cool slightly before removing from the tin (they may need a little persuasion by running a small knife around the edge.

5. Place on a wire rack to cool, while you repeat the cooking process twice more (this recipe makes 36). I dipped some of mine in a mix of granulated sugar and cinnamon when they were still warm (100g sugar mixed with 2tsp cinnamon)

Chocolate Dipping Sauce

200g of dark chocolate

100ml double cream

100ml of whole milk

3 tbsp golden syrup

1/2 tsp vanilla extract

1. Break up the chocolate into pieces and place in a pan with all the other ingredients. Gently melt together over a low heat, stirring occasionally until you have a smooth shiny sauce.

Donut Icing with sprinkles

1 cup of sieved icing sugar mixed with enough milk to make a smooth icing a few drops of vanilla extract to taste. Once the donuts have been dipped allow to dry for a few minutes then sprinkle with coloured sprinkles.
