Vegan Chocolate Cake
My daughter has friends coming to stay this weekend and one of them is a vegan, so instead of making two different cakes one for her and one for us, I decided to try this recipe I found on 'all recipes'. We have tried it and everyone agrees you would not know that there is no dairy or eggs in it, its a lovely moist fluffy cake and very chocolatey!
Serves 8
7 oz plain flour
7 oz caster sugar
4 (generous) tablespoons coco powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
5 tablespoons vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white wine vinegar
8fl oz water
1. Preheat oven to 180 c / gas mark 4. Oil a 13x23cm loaf tin (I lined the bottom with baking paper).
2. Mix together the flour, sugar, coco, bicarbonate of soda and salt. Add the oil, vanilla, vinegar and water, mix together until smooth.
3. Pour into prepared tin and bake for 45 minutes. Remove from oven and allow to cool.
