Vegetarian "sausage" rolls

I had a trip into Lewes yesterday to get my daughters car MOT'ed. It was cold and windy and as I only had an hour to kill I fancied a hot sausage roll for lunch. I don't eat processed meat so a normal sausage roll was out of the question but being in Lewes I thought it would be the easiest thing in the world to find a decent vegetarian version, how wrong I was! So today I made my own version using left over Squash, red pepper and Feta cheese, extremely quick and easy to make and well worth the effort.

100g Feta Cheese

1/2 red onion

clove of garlic

1 sweet red pepper

good handful of chopped butternut squash (about 1cm square pieces)

4 cherry tomatos (seeds removed)

butter for frying

salt and pepper

1 sheet ready roll puff pastry

1 egg for glazing the pastry

sesame seeds to decorate (optional)

1. Pre heat the oven 200 degrees. Start by frying the butter nut squash pieces in a frying pan on a medium heat until it starts to brown.

2. Chop the onions and sweet pepper into bite size pieces and mince the garlic. Cut the cherry tomatoes into quarters and remove the seeds.

3. Add the onion and garlic to the pan with the squash, cook for a few minutes then add the sweet pepper and tomato pieces and continue cooking until the peppers are starting to soften. Season with salt and pepper. Allow to cool.

4. Unroll the pastry sheet and cut in half long ways.

5. Crumble the Feta cheese into the vegetable mixture and stir to mix in thoroughly, then put half the mix down the middle of one half of the pastry and then repeat with the other half of the pastry.

6. Wet the long edge of the pastry strips with the beaten egg and carefully fold the pastry over the vegetable mix so it meets the other pastry edge and you have a long tube. Cut each roll into 3 pieces (or more if you want small rolls) and turn over so the join in the pastry is on the bottom and place onto a baking tray. Brush with the egg wash and sprinkle with sesame seeds if using. Bake in pre heated oven for 15 minutes until puffy and golden brown.
