Courgette and Thyme Soup

This is the nicest courgette soup that I have made and everybody here loves it! It's so easy to make too and you can even use a small marrow if you remove the soft middle first.
Tablespoon of butter
1 clove of chopped garlic
1 medium onion
2-3 sprigs of Thyme, leaves removed from the woody stalk
1kg courgettes
1 pint of chicken or vegetable stock
2-3oz grated parmesan
splash of cream (optional)
1. Chop the courgette and onion and gently sauté them, on a low heat in a deep frying pan for 5 minutes.
2. Add the garlic and thyme and cook for a further 2 minutes.
3. Add the stock and simmer until the courgettes are tender (about 10 minutes)
4. Allow the mixture to cool slightly before blending smooth in a liquidiser, you may need to add a little more stock if you prefer a runnier soup at this point. Then return to the pan and add the parmesan and cream if using.
5. Serve warm with a sprinkle of parmesan and croutons
