Raw Raspberry Ruffle Balls
I am not into this 'Raw' eating but my daughter showed me this recipe from RawberryFields.com and I thought it looked delicious! They are really easy to make, just stirring the ingredient together and melting the chocolate and they taste divine!
Ingredients:
150g unsweetened desiccated coconut
150g coconut cream(the fat from the top of a can)
2tbsp of liquid coconut oil
4 tbsp of maple syrup
1 tsp of vanilla bean paste
3 1/2 heaped tbsp of raw raspberry powder OR use freeze dried raspberries (crush with a pestle and mortar)
150g of dark chocolate
In a large bowl, mix the desiccated coconut, maple syrup and coconut cream until they are well combined.
2. Add the liquid coconut oil, vanilla raspberry powder and mix until a sticky mixture is formed.
Line a tray with greaseproof paper. Shape the coconut mixture into balls, this mixture will roughly give you around 30.
Place in the fridge to harden.
Melt the chocolate slowly over a bain-marie.
Take the ruffle balls and dip in the chocolate, making sure each one is covered in a thick, even layer of chocolate.
Gently press some freeze dried raspberries on top of each ball and drizzle the remaining chocolate over to decorate. Place back onto the greaseproof paper.
Leave in the fridge to harden.
Enjoy!
These will keep up to 2 weeks in a fridge, if you keep them in an air-tight box.
