Pancetta and Mozzarella Pizza

I always use my bread maker to make pizza dough as its so easy. I have a Panasonic that uses a different process to my old bread maker, but I have stuck to the old ways and they work just as well! I always make the dough the night before I need it and once the bread maker has finished I put the dough into a well floured zip lock bag and put it in the fridge over night, this allows a slow rise and I just divide the dough in two and roll out about half an hour before I put the toppings on and cook it. Ingredients 1. 1 amount of pizza dough (my bread maker uses 300grames of flour to give you an idea of size) 2. 1 400g tin of chopped tomatoes 3. 3 tbsp. tomato puree 4. 1 medium onion 5. 1 tbsp. dried oregano 6. 2 cloves of garlic 7. 1 tsp sugar 8. olive oil 9. good quality Pancetta bacon and large mozzarella ball Preheat oven to 220 degrees Cover two baking sheets with non stick baking paper and oil them well. Remove the pizza dough from the bag and place on well floured board, cut in half, then with a rolling pin, roll out until roughly round and about 4mm thick (I like a really thin base) and about 30cm diameter. Repeat for second ball of dough and place bases on to their baking trays. Chop the onion and garlic very small and fry over a medium heat in a good splash of olive oil with the oregano until the onion is translucent. Pour the tinned tomatoes, tomato puree and sugar into the pan with the onions and allow to simmer for about 15 minutes until thickened Allow tomato mixture to cool a bit before topping pizza bases. While you wait chop the pancetta into pieces (mine were about 5-6cm long) and fry for about 3-4 minutes stirring frequently until just going crispy then remove from the heat.

 

 

Dry the mozzarella with kitchen towel (it can make the pizza soggy if its too wet) and slice. Now just divide the tomato mixture between the two bases and spread thinly to the edges, top with the mozzarella and pancetta and place in the oven for about 15 minutes (my oven can be quite fierce so they may take longer but keep an eye on them while they cook) Remove from oven and carefully peel away baking paper, cut into slices and enjoy!
